Godt Nytår,  tiden går hurtigt, der er allerede dage 16 i det nye år. Jeg håber I er kommet godt ind i det nye år.
Da vi var i London her i December, købte jeg en hel masse krydderier på Borough Market, det meste var chilbla andet chipotle chili flager. Jeg har set chipotle chili her i Danmark men ikke flagerne. Jeg tænkte at jeg vil det bruge i min tandoori masala til at give lidt røget smag.

Happy Newyear, time flies fast, it is already day 16 of the new year. I hope you are safe and happy new year evening.  
When we were in London in December, I bought lots of spices in Borough Market, most different kind of chili, like kashmiri chili and chipotle chili flakes. The real kashmiri chili I have looked for long and the chipotle chili I have seen in special shops here in Denmark but I wanted to use the chipotle chili flakes in my tandoori masala to achive a more smoked taste.

Der var så mange forskellige slags chili fra hele verden i den her lille forretning, f.eks den her Naga Bhut Jolokia, en chili sort der bliver groet i Bangladesh er kendt som verdens stærkeste chili. Bhut betyder spøgelse forresten.  Gad vide om man bliver til en bhut når man spiser den :)

There were so many different kinds of chili from all over the world in this little shop, like this Naga Bhut Jolokia. A chili sort grown in Bangladesh and known as the hottest chili in the world. Bhut means ghost by the way, I dont know if you become a ghost if you eat this chili :)

Sidste gang vi var I London var vi også i Borough Market, men det var på en søndag hvor der ikke var så meget der var åbent.  Denne gang var vi derover på en lørdag, hvor alt var åbent og der var en helt andet stemning, en rigtig bazar stemning. 

We also wisited the Borough Market, but it was on a Sunday where there were not so many shops that were open.  This time we went on a Saturday and that was a whole different experience, every thing was open and there was this bazar feeling and of course a huge crowd.

Alle guide bøgerne siger at man siger at markedet er en foodie himmel og det kan man kun give dem ret i. Så meget at smage og købe vores favorit var de her friske bagte og stadig lune "cheese and olive bread sticks".  

All our guide books say that the market is a foodie heaven and they are so right. So much to taste and buy. Our favorite were these fresh baked and still hot "cheese and olive bread sticks"

Opskrift :
Til Ingefær, Citron & Chipotle tandoori masala kylling har jeg brugt kylling bryst filleter, man kan bruge alt slags kylling kød, kylling lår, over lår. 

Recipe:
For the Ginger, Lemon & Chipotle tandoori masala chicken i have used chicken breast fillets, you can use all kind of chicken meat, thighs or drums.


ingredienser / ingredients

1 kg kylling fileter / 1 kg chicken fillets
saft af 1 citron /  juice og one lemon
revet skal af 1 citron / lemon zest of one lemon
2,5 dl græsk yoghurt / 2,5 dl greek  yoghurt
1 spsk  olie /1 tbsp vegetable oil
1 tsk chili pulver / 1 tsp  red chili powder
1½ tsk frisk fint revet ingefær / 1½ tsp  fresh grated ginger
1 tsk spids kommen pulver / 1 tsp cumin powder
1 tsk  salt / 1 tsp salt
1 tak koriander frø pulver / 1 tsp coriander seed powder
½ tsk gurkemeje pulver / ½ tsp turmeric powder
½ tsk chipotle chili flage  ( se tip ) / ½ tsp chipotle chili flakes ( see tip )

tip: chipotle er mexikansk røget chili, jeg har haft chili flagerne med fra London. Hvis man ikke har chipotle chili flager kan man bruge almindelig chili flager eller røget paprika pulver i marinaden.

tip : chipotle is a mexican smoked chili,  if you dont have chipotle chilli flakes , you cna use regular chili flakes or smoked paprika powder in the marination.



garnering/ garnish

½ tsk chipotle chili flager / ½ tsp  chipotle flakes
½-1 tsk garam masala pulver / ½-1 tsp  garam masala powder
lidt frisk koriander blade /  fresh coriander leafs

Lav overfladisk snit i kylling fileterne. Bland halv delen af citron saft sammen med ½ tsk af den frisk revet ingefær, kom det over kylling fileterne og masser det let ind i kødet. Læg det i køleskabet mindst 10 minutter

Make some cut on the chicken fillets.  Mix half of the lemon juice with ½ tsp of the fresh grated ginger, pour that over the fillets and lightly rub it into the chicken meat. Place the chicken in the firdge for at least 10 minuts.

- bland resten af ingredienserne sammen med yoghurt (undtagen garnering), kom kylling fileterne i yoghurt blandingen. Lad kylling marinere i yoghurt blandingen minimum 1 time i køleskabet.

-  forvarm oven til 250 grader. Smør en oven fad med lidt olie og læg kylling fileterne med rids siderne op. Gem den tilbage blevene marinade der er i skålen.  Placer fadet med kyllingen på midter rille i oven.

-  efter 10 minutter vendes, kylling fileteren , halvdelen af rest marinaden kommes/smøres på fileterne.

- 10 minutter igen, tages fadet ud af oven,  kylling filteren vendes igen , resten af marinaden kommes på,  drys med chili flagerne, garam masala og de friske koriander blade. Læg fadet i oven igen ca 15 minutter mere. Den sammenlagte stegning tid for kylling er ca 35- 45 minutter alt efter hvor tyk kylling fileterne er. Kødet skal være saftig og mør.

-  spis Ingefær, citron & Chipotle tandoori masala kylling med en salat, chutney og noget lækkert brød eller kogte ris.

-håber I kunne lide opskriften og at i nyd turen til Borough Market, have en god weekend.

- mix rest  of the ingredients with the yoghurt ( except the garnish, ofcourse) , add the chicken fillets in the yoghurt,  mix well and let the marinate in the mixture at least one hour in the fridge.

- preheat the oven 250 degree C.  Smear little oil in a oven tray, place the chicken filets with the "cut" side up. (safe the left over marinade)  Place in oven and after 10 minuts turn the chicken filets and add/brush half of the left over marinade on the chicken filets.

- after 10 minuts again take out the tray and turn side again, brush the res of the leftover marinade on the chicken filets and sprinklel the chili flakes, garam masala and the coriander leafs on the top and palce in the oven again for 15 minuts more.

- the whole cooking time for the chicken fillets s about 35 -45 minuts depending on the thickness of the filets. The meat should be juicy and tender.

- make chutney., salad and some delicious bread with the Ginger, Lemon & Chipotle tandoori chicken Or some boiled rice.
